Ingredients:
- 4 pounds beef ribs
- 1 white onion
- 1 head of garlic plus
- 7 cloves
- 2 tomatoes
- 3 Chile pods
- 3 Pasilla chile pods
- 5 chile de árbol
- 4 bay leaves (divided)
- 1-inch cinnamon stick
- 2 tsp sesame seeds
- 1 tsp whole black pepper (peppercorn)
- 2 tsp whole spices
- 2 tsp black pepper
- 2 tsp whole cumin
- 3 1/2 tbsp salt
- Tortillas
- Chopped cilantro
- Chopped onion
Instructions:
- Clean and wash the Chile pods, removing the seeds.
- In a large pot, add the beef ribs, white onion (quartered), head of garlic (cut in half), tomatoes, Chile pods, Pasilla chile pods, chile de árbol, 2 bay leaves, cinnamon stick, sesame seeds, whole black pepper, whole spices, black pepper, whole cumin, and salt.
- Fill the pot with enough water to cover the ingredients.
- Bring the pot to a boil, then reduce the heat to low and let it simmer for 2 to 3 hours, or until the meat is tender and falls off the bone.
- Remove the beef ribs from the pot and shred the meat using two forks.
- In a separate pan, heat some oil and add the chopped onion and minced garlic cloves. Sauté until golden brown.
- Add the shredded beef ribs to the pan and mix well with the onions and garlic. Cook for a few minutes to allow the flavors to meld together.
- Warm the tortillas on a griddle or in the oven.
- Assemble your tacos by placing a spoonful of the beef mixture onto each tortilla.
- Garnish with chopped cilantro and chopped onion.
- Serve the tacos immediately and enjoy the delicious flavors!
